While cooking onboard the Regent Seven Seas Mariner from Darwin to Sydney, Vic Cherikoff and I held a series of cooking classes featuring all types of Australian herbs and spices.
This cooking classes features a recipe by me called Top End cold smoked Barramundi with Alpine pepper micro-greens and a wild lime and lemon myrtle mayonnaise as well as Vic Cherikoff’s famous Wattleseed Pavlova.
