Whilst in transit around the world, I stopped in Amsterdam for a few days with my good friends Greg and Fran who took me to visit Amsterdam’s most famous “Patate Frites” stand - Vlaamse Friteshuis. This traditional Dutch snack of chips and mayo (referred to as Patat met) is very different to the Australian tradition of tomato sauce with your chips. The hand cut chips are served in a conical paper cup, then drizzled with Remia Fritesaus (Dutch mayonnaise) which has much smoother flavour than most commercially made mayonnaise and is best compared to home-made mayonnaise that you make yourself. Guaranteed cholesterol free dutch food… not!
Fran introduced me to another favorite called Bitterballen, which is dutch styled fried meatball served with mustard. The recommened beverage with Bitterballen is a chilled Hoegaarden on the side. Lots of them infact. Since returning to Australia, I found a recipe for Bitterballen and have added a few Australian flavours to the mix instead of the usual curry powder.
