Knife Sharpening Video

Leigh Hudson from the Chefs Armoury knows just about everything there is to know about chef knives; from how they are made to the steel which each company uses. He can tell you the difference in how they make Japanese chef knives to how they make European chef knives.

I suggested to Leigh that we should do video on how to sharpen knives, as the Chefs Armoury provides an “overnight” knife sharpening service. During the video we talk about the process for getting an edge with Japanese water stones, through to honing knives on steels and diamond steels. The video isn’t aimed at just chefs, it’s actually a comprehensive “how to video” on how to sharpen and keep on edge on your knife.

"Hi Benjamin,

I found the video very interesting and Leigh did a good job demonstrating end explaining the use of the 3 stones I have been given the 3 stones and a set of Japanese knives as a gift from a Cookery school in Tokyo when they visited Ryde TAFE some years ago, it works very well as you said as long as you look after your knives and spend the time sharpening them.

You should try and get that yideo into the Cookery School's Library for students who are keen to do their own knives, rather than giving them to a knife sharpener to ruin, as there a not many good ones about, good luck in your ventures,keep in touch and give me a call when in Sydney next.
