Ingredient
Formulated by Vic Cherikoff, Yakajirri is a spice mix made from bush tomatoes (akudjura) blended with garlic, Alpine pepper and dried conventional tomato flakes. Yakajirri has a sweet and savoury taste of tamarillo, caramel, sun-dried tomatoes with a hint of garlic and the peppery notes from the added Alpine pepper.
Yakajirri is a replacement to straight akudjura (ground bush tomato) as many people (including chefs) had trouble using pure bush tomatoes because of the bitterness often expressed when it is heated even a little. Rather than struggling to balance out this unwanted flavour, Yakajirri provides perfect amount of salt and peppery heat, garlic undertones and tomato notes needed to strongly enhance the bush tomatoes while adding to its versatility in use.
Yakajirri is almost like tomato sauce in dry form and is certainly able to be used in as many dishes. Anywhere a dash of spicy tomato is needed, bring out the Yakajirri. It is terrific as a rub on ribs, steaks, sweet corn and other vegetables with butter, chicken, poultry and fish.
