About this recipe

My favourite way of using wattleseed is to put it through my espresso machine and make a cafe latte based on ground wattleseed instead of ground coffee. This recipe of cafe latte with wattleseed was inspired by Vic Cherikoff’s experience when he created the first Wattlecino (wattleseed cappuccino) back in 1984.

By using Wattleseed in stead of coffee you’ll have a caffeine-free hot drink which is low in GI (glycemic index). If you usually have sugar with your café latte, then I’d recommend you not to add any sugar as it overpowers the taste of wattleseed.

A cafe latte, is literally “coffee with milk,” and is 1 shot of espresso with generous amount of steamed milk with a little foam.

Ingredients

7g – 10g (1 –2 tablespoons) wattleseed ground
200ml milk

Cooking instruction

Pack the espresso filter with ground wattleseed. Make 2 shots of espresso equalling between 30ml – 60ml depending on the required strength, place in glass. Steam the 200ml of milk in a small jug. When hot, froth the milk a little. Pour into glass the hot milk till nearly full, then spoon a small amount of foam onto the top.
