About this recipe

A great alternative to the classic cosmopolitan is this ribery martini. This martini is a spectacular cocktail with highlights the riberry fruits and goes so well with iced vodka. Try using different flavoured vodkas like a citrus or berry which will provide a different perspective. What ever vodka you use, make sure you store it in the freezer before making this.

Ingredients

45ml (1½ oz.) vodka
10ml (2 teaspoons) riberry confit syrup
5g (1 teaspoon) riberry confit fruit
90ml (3 oz.) cranberry juice
squeeze of fresh lime juice
ice

Cooking instruction

Fill your martini shaker full of ice. Then pour in the vodka, riberry syrup, cranberry juice and squeeze of lime juice. Place the lid on the martini shaker and shake for about a minute.

Remove the top from the shaker and strain the riberry martini into the chilled martini glasses. Place the riberry confit fruit into the martini for garnish.

The riberry or lilly pilly as it is sometimes referred to as is a small red Australian rainforest fruit which is grown on small shrubs through larger trees. Most riberry fruit are seedless and has an amazingly aromatic, cinnamon, cranberry and clove flavour with the texture similar to that of a granny smith apple.
