The rich and creamy nature of freshly shucked Sydney Rock Oysters with the sweet and sour notes of the wild limes confit are a great combination. Wild limes grow in the semi arid outback of Queensland and the fruit perfectly formed baby limes with an intense lime flavour. They make terrific sauces, marmalades and pickles. These Sydney rock oysters with wild limes make great canapés or starters.

Ingredients

12 fresh oysters
12 wild lime confit

Cooking instruction

You’ll need an oyster knife to shuck the oysters open. The best way to shuck an oyster is to begin with the flat side of the oyster upwards and placed on a wet tea towel. Begin by inserting the oyster knife into the seam near the hinge. Move the blade around carefully and "unlock" the oyster with a twist. Once you have the top shell off, slide your knife under the oyster and cut the abductor muscle. Then turn over the oyster inside its shell for presentation purposes. Some people prefer to wash them with fresh water, but I just carefully remove the bits and pieces of shell with the oyster knife.

To serve put one or two wild limes and it’s syrup on top of each oyster and serve either as a dozen or half dozen.
