Penfolds has a habit of creating great buzz when it comes to the annual release of Penfold's Bin Range wine and this years vintage wasn’t any different. One of the releases that stood out for me was the 2005 Penfolds Bin 407 Cabernet Sauvignon which consists of South Australian fruits from McLaren Vale, Padthaway, Robe, Wrattonbully and Barossa Valley. Developed by Penfolds former winemaker, John Duval the Penfolds Bin 407 Cabernet Sauvignon was developed in response to increased availability of quality Cabernet Sauvignon in the region.

After opening, I allowed this premium South Australia wine time to sit, then poured a glass in my extra large, oversized wine glasses. Immediately I could smell hints of blackcurrant, cherry and chocolate which was very different from the Penfolds tasting notes which mentioned beetroot, capsicum and sarsaparilla. The taste however is best described as full bodied, complex and fresh. When much more matured would go well with most red meats such as a chargrilled steak, lamb roast, Peking Duck or BBQ kangaroo. The tasting notes indicated that the wine was matured for 12 months in French and American oak.

You could drink the 2005 Penfolds Bin 407 Cabernet Sauvignon now, but it’s just too young. There’s no doubt a premium wine like this will get much better over time, so I if were you, I’d grab a dozen and forget about them for say 10 years.
